Fried polenta squares


Ingredients:

  • 1 cup of polenta (corn grits)

  • 3 cups of water

  • Salt & pepper

  • 3 tbsp butter

  • 1 cup of seasoned bread crumbs

  • 1/4 cup shredded Parmesan cheese

  • 1/4 cup of oil for frying

  • 1 egg beaten for dredging


  1. Bring 3 cups of water to a boil with 1/2 tsp of salt.

  2. Add 1 cup of polenta and reduce heat.

  3. Cook slowly about 5 minutes stirring occasionally.

  4. place in square pan, spread out evenly and let cool.

  5. Once cooled flip pan over and polenta should hold shape of pan, cut into equal squares and separate.

  6. Place the breadcrumbs in 1 bowl or zip lock bag, and the beaten egg in separate bag or bowl. Place each polenta square in the egg first, let excess dip off then place into the breadcrumbs to evenly coat.

  7. Once all squares are fully coated with breadcrumbs place in hot oil (fry pan) and cook ono both sides at med-high heat until golden brown.

Enjoy with your favorite pasta dish or as a late night snack with some red sauce.
