Sweet & Tangy Pork Belly Burnt Ends

Words cannot describe the taste of these delicious bite size hunks of pork belly. This is one of those recipes that are well worth the time put in to making it.



The finished product.. These will not last very long and are extremely addicting

Ingredients :


-4-7 lb. pork belly (uncured without seasoning)

-Sea Salt

-Pepper

-Garlic Powder

-Onion Powder

-Light Brown Sugar

-Paprika

-Honey

-Butter


STEP 1

Remove Skin of belly if still attached, do not remove the fat.

Slice into 2 inch strips, then into 2in x 2 in cubes.




STEP 2

Mix 2 Tbsp of Salt, 2 Tbsp Pepper, 1 Tbsp Onion powder, 1 Tbsp Garlic Powder, 1/2 cup of brown sugar & 1 Tbsp of paprika together in a bow (this mix can be increased with larger sized belly)

Evenly rub dry mixture all over the cubed meat and place on a wire rack spread out enough so they are not touching.



STEP 3

Place into a Wood Smoker at 250 degrees (an oven will work just fine at the same temperature) Cook for approx 2 - 3 hours depending on amount, you will notice cubes shrink in size and they are ready for step 4 when evenly browned.



STEP 4

Place cubes into a metal tray (Sterno tray works perfectly) add 1 stick of butter sliced up, 1/4 cup of honey or more depending on sweetness and sprinkle with brown sugar.





Step 5

Cover Tray with foil and place back in smoker /oven at 250 degrees for another hour or so.. time will vary depending amount of meat. You will know its done when fat is rendered down and the cubes are about 1 inch x 1 inch.


Step 6

Remove from heat, open foil and ENJOY !!!!

These will pair well with anything really, we made some baked beans and roasted cauliflower.
