A hearty meal, sure to fill you up!
Ingredients:
One zucchini chopped
One yellow squash chopped
One medium onion chopped
Teaspoon of garlic
A cup and a half chopped carrots
Four stalks of celery chopped
One cup of chopped tomatoes
One medium head of Napa cabbage shredded.
Meatballs
1/2 pounds of any kind of Protein. Beef, chicken, venison, etc.
1/2 teaspoon chopped garlic
One egg
1/4 cup breadcrumbs
One Tablespoon Parmesan cheese
One teaspoon garlic salt
Pepper to taste
1/2 teaspoon Italian seasoning
8 cups vegetable stock
One can white kidney beans drained and rinsed
Making the Stock:
In a large stock-pot add 3 tablespoons of extra virgin olive oil.
Add all chopped vegetables except the beans and cabbage.
Cook the vegetables on medium to high heat with salt and pepper for 5-7 mins.
Add all 8 cups of stock and bring to a boil.
While this is coming to a boil, make the meatballs.
Making the Meatballs
Put all of the ingredients for the meatballs into a bowl and mix them up, using your hands is easiest for this.
Once everything is mixed well together, roll the mixture into small meatballs, about a half-inch in size.
Finish it Off:
Add the meatballs one at a time while soup is boiling.
Once all the meatball are added…lower the heat to medium-low and cook for another 20 minutes
In the last 8 minutes, add cabbage and white beans
Add salt and pepper to taste after the 20 mins of cooking.
Boil your favorite pasta, rice, or barley while the soup is cooking down.
Serve by adding the Meatball Vegetable Soup to your favorite grain!
Top with grated cheese and serve...enjoy!
