Wild Game Taquitos


This is a super simple recipe that can be used with any wild game leftover dish.


Ingredients:


  • Cooked wild game meat (can be any leftover meat that you have) You can also use cooked ground meat for this recipe.

  • Corn tortillas (we used mission Gluten Free corn tortillas for this) there are many different size tortillas that is totally up to you and personal preference.

  • 1/4 cup Beef broth or some type of broth to moisten meat

  • 1 cups cheese of your choice (we used lactose free/gluten free mozzarella due to dietary restrictions)

  • Salt & pepper to taste

  • 1/2 cup of fry oil (we used coconut oil)

  • Wooden toothpicks


  1. Take cooked wild game meat, this can be a cooked roast, leftover loin, ground meat etc, preferably without any gravy or marinade on it and cut it into small pieces.

  2. Place diced meat into food processor and pulse until meat is the consistency of pulled pork, add some broth at this point if needed to soften up the meat.

  3. If you do not own a food processor that is ok, just take some time to finely chop the meat into very small pieces and place in a mixing bowl.

  4. Place oil in fry pan an heat to med-high heat.

  5. Wrap tortillas in a damp paper towel and place in microwave for 30 seconds to soften them for rolling.

  6. Lay softened tortillas out and place meat in center of each tortilla about 1/2 wide from top to bottom making a straight line of meat, sprinkle cheese on top of the meat.

  7. Roll the tortilla gently and use toothpick to hold shut.

  8. Place tortillas in hot oil and cook on both sides until golden brown and crispy.


Serve with your favorite sides! pictured about is yellow rice, lettuce stuffed peppers and homemade re fried black beans.
